จีน - Chinese ravioli recipe
 Receipt for 60 raviolis - Preparation: 30 mn - Cooking: 15 mn. Ingredients : For the paste 180 G of flour of corn 12 with frozen water 15cl A good salt pinch For the joke 1 chopped meat steack of ox or pig 1 spoon with sauce soya soup 1 spoon with salt coffee 1 spoon with wine wine soup Chinese rice or of dry Sherry 1 good white pepper pinch 3 spoons with sesame oil soup 1/2 fresh onion finely thin slice 1 handle of Chinese cabbage sheets finely chopped, some chopped bamboo shoots 2 cm of fresh root of ginger 1 clove out of powder Preparation Prepare the paste of the ravioli. Mix salt and the flour. Add little by little the water frozen while mixing as much as necessary to form a homogeneous paste. Do not add more water than necessary. The quantity of water will vary from 12 with a small score of Cl according to the quality of the flour and water. Roll the paste in ball, let put back it at least 30mn in a bowl covered with a line dryness. Prepare the joke In a bowl, mix the sauce soya, salt, the wine of rice, the white pepper and the meat. Once the quite homogeneous mixture, add the other ingredients and mix well. Furnish the ravioli, work the paste and roll it in ball. Divide it in 60 small balls. Spread out each small ball in circle 5-6 cm in diameter. Deposit a spoon with close-cropped soup of joke in the center of each circle of paste. Stir up the contour of each circle of paste with water.
